Hint: Forget the syrup and use preserves instead.


Scratch Pancakes

4 eggs, separated

1 cup flour

2 tablespoons sugar

1/2 teaspoon salt

1 cup milk

3 tablespoons sour cream                       

Beat yolks until thick. Sift flour, salt and sugar together and mix with yolks and milk. Stir in sour cream. Beat egg whites until stiff but not dry. Fold into batter.

Oil griddle and cook about 2 minutes per side or until lightly browned. Flip when bubbles appear. Serve immediately with butter and syrup.

Makes 6-8 pancakes.
