  • That Easter ham you savored at Sunday’s feast needs some help as leftovers. An easy route to an impressive dinner is our ham loaf, lightened with ground, fresh turkey. It bakes to a syrupy brown. For the ultimate fancy version, place a maraschino cherry in the center of each pineapple ring on top.
    1 pound fresh ground turkey
    1 pound ham, ground (or turkey ham)
    1 cup fresh breadcrumbs
    1 egg
    1 teaspoon salt
    1⁄8 teaspoon pepper
    3⁄4 cup milk
    1 can pineapple rings with juice
    Sauce:
    2⁄3 cup brown sugar
    1 teaspoon dry mustard
    1⁄2 cup pineapple juice
    1⁄4 cup vinegar
    Mix ground meats, breadcrumbs, egg, salt, pepper and milk. Place in oiled loaf pan. Leave an edge at top for the sauce. Bake at 350 degrees for one hour.
    Whisk sauce ingredients in a pot. Heat and stir until sugar melts. Pour sauce over loaf and continue baking for 30 minutes.
    Serve 8
    Notes: Garnish top with pineapple rounds after you pour the sauce. Use canned pineapple juice instead of water in sauce. You may want to split this recipe into two pans.
