Dinner idea: Asparagus, Tomato and Spinach Frittata




8 eggs

2 tablespoons non-fat milk

Handful of asparagus spears, wooden stems removed

Handful of small cherry tomatoes

Handful of baby spinach, chopped

Sea salt and freshly cracked pepper, to taste

Feta cheese, optional

Preheat the oven to 350 degrees. Mix the eggs with the milk until well combined, then season with sea salt and freshly cracked pepper, to taste. Pour the egg mixture into a baking dish. then place the asparagus spears, tomatoes, spinach and feta cheese evenly in the egg mixture. Bake at 350 degrees for 20 minutes, or until a tester inserted in the center comes out clean. Remove from the oven and cool for 5 minutes before cutting. Serve immediately.
