It comes in a number of styles, ranging from pale blond to deep tawny, and it comes in a number of flavors from very sweet to quite dry. Lighter Madeira is served before dinner and darker after dinner. The wine (1/4 cup in 1 cup chicken broth with a sprig of thyme) is celebrated in a variety of sauces.
