LINGUINI WITH ARUGULA, GARLIC AND PARMESAN

Makes 4 to 6 servings

1 pound linguini

Salt for cooking water

6 tablespoons olive oil

10 cloves garlic, peeled and thinly sliced

5 ounces baby arugula

1/2 cup freshly shaved Parmesan cheese

Bring a large pot of well-salted water to a boil. Add linguini and cook until desired tenderness is reached.

While pasta boils, in a small saucepan, heat olive oil. Add garlic and simmer over low until garlic is soft and beginning to turn brown.

Drain pasta, return to pot. Add arugula and garlic in oil. Toss to combine and coat well. Season with salt and pepper to taste.

Serve, topped with large shaves of Parmesan cheese.
