My grandmother, Betty Bennett, was born and raised in West Virginia. And, she is one heck of a cook! But, when I ask her how she makes something, she replies, “Oh, Cathy, I don’t know! I don’t have a recipe. I’ll just show ya’ how I make it someday!” But, I think she knows that ‘that someday’ doesn’t really exist.
I have a lot of favorites from my Mammaw’s cupboard. She cooks her famous corn bread “johnny cake” and brown beans, Bar-B-Qued ham, flapjacks and syrup and zucchini bread. And, she makes the best peanut butter fudge in the world!
Anyway, I did manage to get a simple and easy recipe from her for fried apple pies. It’s not the typical West Virginian recipe. But, I love it because it’s quick to make and tastes homemade! So here it is, courtesy of my Mammaw.

Mammaw’s Fried Apple Pies

  • 1 can buttermilk biscuits (10)
  • 1 can applesauce
  • 6 Granny Smith apples
  • Vanilla
  • Cinnamon
  • Sugar

Directions:

  • Cut apples in thin slices and cook. Add sugar to taste, 1 teaspoon of vanilla and 1 teaspoon of cinnamon.
  • Mix Granny Smith apples with can of applesauce.
  • Roll out biscuits thin.
  • Put a small amount of apple mixture on biscuit and fold over like a half moon.
  • Brush edges with water. Use a fork to close around it.
  • Fry in Crisco on each side until brown.

Serve with vanilla ice cream, if desired.
